Keto Italian Meatballs are amaze-balls!

Keto Italian meatballs are tender and juicy, with a blend of ground beef and pork, parmesan cheese and Italian seasonings. Serve with your favorite marinara sauce atop zoodles, pile on a crusty gluten free sub sandwich or devour them straight out of the oven.

Hopefully you got your freezer stocked up with a selection of meats. It being St. Patrick’s Day recently, mine is mostly full of corned beef. Keeping food in the freezer is not something I am a fan of but sometimes there’s no getting around it. You will not see me instructing you how to store meals in the freezer becuase it deteriorates food quickly and always leaves an unpleasant taste.

How to make Keto Italian Meatballs

In a small bowl, combine the flaxseed meal with the heavy cream and allow to sit for 10 minutes.  In a large bowl, combine ground beef, ground sausage, parmesan cheese, Italian seasonings and salt and pepper, mix thoroughly. Incorporate the flaxseed mixture in to the meat mixture and combine well.

These are the Italian seasonings I like to use. These herbs are lightly dried, so they still hold a tremendous amount of freshness. The basil is especially nice to have on hand because of how quickly fresh basil deteriorates.

Have the oven set at 350 degrees and a sheet pan lined with parchment paper ready. Form the meat mixture in to one-inch round spheres and place on the parchment paper. Bake in the oven for 20 minutes. The batch will make around 50 small meatballs.

Ingredients

1.5 pounds ground beef 90/10

1 pound pork sausage, I use Jummy Dean all natural

1/8 cup Italian seasonings, slightly dried

1/4 cup grated parmesan

1/8 cup flaxseed meal

1/4 cup heavy cream

1/2 tsp. salt

1/2 tsp. black pepper, freshly ground


Instructions

Set oven to 350 degrees and have a sheet pan lined with parchment paper ready.

Notes

If using dried Italian herbs, reduce to 1 tablespoon plus 1 tsp.
