This easy low carb lasagna is made with “fathead” dough, sausage, tomatoes, cottage cheese, and topped with a blend of cheeses. A simple and delicious recipe you will want to hold on to.

This recipe has been in the back-pocket for quite a few months. I have been waiting for the chill outside to set in so it would be a comforting dish to get you through the Fall and Winter months.

Making lasagna didn’t used to be something I would do often but ever since utilizing “fathead” dough in place of pasta, it is one of my favorite meals to prepare and eat too!

The cheese pasta sheets provide an additional layer of flavor along with structural stability that regular pasta noodles don’t provide.

Easy low carb lasagna has been the favorite lasagna recipe among the taste testers and is the easiest of all to make, so I love that for everyone!

Contracting Covid-19

I have shared some of my personal dealings with covid-19, through the weekly newsletters, to help others be informed.

Many have said the virus is a myth or much like having a cold. My experience has been much different than any sickness I have ever experienced.

When the symptoms started, there were a lot of intense muscle aches and headaches. My throat was mildly sore and the pressure in one ear was really the only thing bothersome. I did have the chills with a low fever and a small cough.

Testing was done immediately and I began isolation.

Symptoms Worsen

I received a call on the sixth day from public health informing me that my test was postitive.

There were many days of nothing but laying in bed because that was all my body could handle. After six days is when the loss of taste, smell, and difficulty breathing started. Over the next few days breathing became very scary at points.

When I began to feel a little better, I couldn’t wait to get some work done. After a couple of weeks, I finally got outside for a walk. Each time I felt good and exerted my body at all, a BIG crash followed and symptoms would worsen, new ones would arrive, or old ones would come back.

Three weeks in and the energy level was still low. Breathing was better but still easily shorted. The tiredness and exhaustion seemed as though they would never wane and bouts of nausea came and went throughout the days.

My heart was palpitating and endlessly pounded hard against the chest throughout it all.

The Final Stretch

It is now the beginning of the fifth week since first contracting covid-19 and resting has been the only clear option. Each day I feel better but still do not have much energy and cannot walk far without falling short of breath and the heart pounding hard.

I have had my fair share of sicknesses throughout my life. Having covid-19 has been like nothing I have ever experienced. The exhaustion, duration, the oddness of symptoms coming and going over and over, and especially the difficulty breathing is what makes it very real.

I am unbelievably grateful for my mother and sister whom I would never make it through this life without. I do want to thank my friends and family for checking in with me and sending me well wishes.

Description

Easy low carb lasagna is made with “fathead” dough, sausage, tomatoes, cottage cheese, and topped with a blend of cheeses.


Ingredients

For the cheese pasta sheets:

1 1/2 cups shredded mozzarella cheese

1 cup Monterey or pepperjack cheese

1/2 cup parmesan cheese

1 cup sharp cheddar cheese

3 large eggs or 270 grams

2 T coconut flour

For the Sauce:

1-12 ounce roll Jimmy Dean sausage, I use Hot

1-14.5 ounce can diced tomatoes

1 T dried oregano or 2 T fresh oregano

Salt and pepper to taste

For the filling:

2 cups cottage cheese

For the topping:

1/2 cup mozzarella

1/2 cup Monterey Jack

1/2 cup parmesan

Garnish:

Fresh basil or parsley (optional)


Instructions

For the cheese pasta sheets:

Mix all cheeses and coconut flour together.

Mix the eggs together and add to the cheese mixture.

Spread out thin on parchment paper or a silcone mat lined-pan. Use an offset spatula or place a sheet of parchment over the top and use a rolling pin over the top.

Bake in 375 degree oven for 15-20 minutes.

When cool enough to handle, cut in half. Trim edges if neccesary.

For the Sauce:

Brown the sausage and drain of excess fat.

Add tomatoes and seasonings.

Cook down 10-15 minutes.

All Together:

Lay one cheese pasta sheet in the bottom of an 8×12 inch pan.

Layer half of the meat mixture over the top.

Layer one cup of cottage cheese over meat mixture.

Repeat previous 3 steps.

Top with cheese mixture.

Bake in 375 degree oven for 20-25 minutes.

Garnish with fresh basil or parsley. (optional)
