Roasted Zucchini Hummus Recipe

Zucchini hummus is here and it is sensational!

Celebrate hummus day with this roasted zucchini hummus recipe. This magical recipe is vegan, gluten free, and low carb all in one!

Zucchini hummus is a perfect addition to keep your charcuterie or vegetable board low on carbs! And of course, you can’t have a charcuterie or vegetable board without crackers, so make sure to grab your favorite flavor of Flackers crackers, both low carb and gluten free! Made from organic flax seeds and other natural ingredients.

Who doesn’t love natural and fresh ingredients? And who doesn’t love a simple recipe? This is my favorite kind of recipe, the oven is doing all the work here!

This recipe is effortless and so worth the thirty-five-minute wait to allow the fresh zucchini to get roasty-toasty.

Zucchini hummus uses less than five ingredients and has omitted the traditional use of garlic. I know, it is absolutely shocking that I chose to not put garlic in a recipe but this zucchini hummus is so good without it!

How to make Zucchini Hummus

Cut the ends off of one pound of zucchini, about 2 medium sized. Cut in half lengthwise and then in half again, creating four long spears out of each zucchini.

Place the zucchini in a large casserole dish and lightly coat with olive oil and kosher salt. Transfer to a half-sheet pan and place in a preheated 425° oven. Bake for 35 minutes or until very tender.

Remove the zuchhini from the oven and place in a blender with the olive oil, tahini, lemon juice and salt. Puree all of the ingredients together until they are smooth.

Use the zucchini hummus as a dip with vegetables or flatbread, or as a spread for burgers, wraps and sandwiches.

Nutrition

Zucchini hummus is all-around healthy! A quarter cup approximately contains 66 calories, 6.2 grams of fat, 1.6 net carbs and 1.2 grams of protein.
