Multigrain gluten free Pancakes

Multigrain gluten free pancakes are light and fluffy and a little sweet. Top with your favorite fresh fruits, nuts, sugar-free compotes or heavy cream.

Multigrain pancakes are relatively low in carbs

With the incorporation of organic, certified gluten free oatmeal and buckwheat, this pancake recipe is still quite minimal in carbs.

Missing old recipes

Multigrain pancakes are one of those food items I have desperately missed since going gluten free. I used to have a fantastic recipe that I absolutely LOVED and have been craving it for quite some time. I finally broke down and got to work on a completely new recipe that I now can enjoy for years to come.

There has been a brand-new bag of buckwheat sitting around my apartment for a few months and I decided now would be the perfect opportunity to use it. Incorporating a small amount into the batter doesn’t make a big difference in carb counts when eating only one pancake.

What is buckwheat?

Although buckwheat has the word “wheat” in it, it is actually gluten free. It is a plant, not a grass. Buckwheat can have a bitter and floral flavor to it. For more nutritional information and health benefits about buckwheat click here.

How to make Multigrain gluten free Pancakes

Combine all of the dry ingredients together in a medium to large bowl and stir. In a liquid measuring cup measure the water and milk and heat until it is lukewarm. In a separate bowl, whisk the sour cream and eggs together, then incorporate the milk mixture. Add the milk mixture to the dry ingredients, mix well and allow to set for five minutes. Add additional milk if the batter is not the desired consistency.

Heat a flat griddle over medium heat and butter or oil as needed. Pour or spoon out batter and cook until each side is browned well. If using a skillet, make sure to re-oil or butter your pan before each pouring of batter.

Makes six, six-inch pancakes.

Ingredients

1/4 cup buckwheat

1/4 cup flaxseed meal

1 cup almond flour

1/8 cup vanilla whey protein powder

1/3 cup certified gluten free oats

1/8 cup coconut flour

2 tablespoons brown monkfruit sweetener

2 teaspoons baking powder

2/3-3/4 cup whole milk

1/3 cup sour cream

2 large eggs

1 teaspoon vanilla
