Breakfast in bed has never been never tasted so good until you’ve had this heavenly berry French toast topped with whipped mascarpone cheese.
The French toast is sooo tasty all on its own but then add the berries, and the orange infused whipped cream mixed with mascarpone cheese on top of that and yuuuummmy…you’ve got dessert for breakfast.
The recipe is easily adaptable for dietary needs. Use your favorite keto bread, gluten free bread, or just use regular. The entire recipe is low in sugar but you know me, I can’t refrain from sneaking a bit of alcohol in to punch things up.
It has been awhile since making something sweet around here, so unlike me. Not to worry, the holidays are fast approaching and I’m sure we will be squeezing recipes in with some extra yummy sweetness.
I have been dying to make the keto cinnamon rolls, they are so dang good, but transform them into berry rolls. I just can’t get enough berry goodness!
Thanksgiving and Holiday Tips
Everything can get a bit overwhelming over the holidays, there are usually too many items on your plate. Some easy tips I have learned about stress management over the season are:
- Make a list of what dishes, pies, and accompaniments you will be making a week in advance.
- If having family members joining, ask them to make one of the dishes and ask about any special requests they may have.
- Clean out your fridge.
- Go through each recipe and write down how much of each ingredient you will need.
- Go shopping. Buy extra containers or wrap for guests to take leftovers in or just to store for yourself.
- Prepare as many dishes and accompaniments ahead of time as you can. I aim for 2 or 3 days in advance.
- Have ice chests set up if you don’t have enough fridge/freezer space.
- Take the turkey out of the freezer on Monday!
Follow these tips and by the time Thanksgiving day comes, you will be lazing around enjoying time with the family, watching the Thankgiving parade or football, instead of frantically slaving away in the kitchen.
How to Make Berry French Toast
For the berry sauce: In a medium saucepan, combine, berries, grand marnier, sweetener, honey, fresh lemon juice, and xanthan gum. Bring to a boil, stirring continuously. Cook for 5 minutes and turn off heat and strain through a fine mesh sieve.
For the whipped mascarpone topping: In a stand mixer with a whisk attachment or in a bowl with a mixer, whip the cream to medium peak. Change to a paddle attachment or use a rubber spatula and fold in the orange juice, zest, and mascarpone.
For the egg batter: In a large bowl, combine the eggs, grand marnier, cream, nutmeg, vanilla, and sweetener.
Heat a flat griddle or large skillet over medium heat. Place one tablespoon of butter in/on heating surface for each slice of bread that will be layed down.
Using desired bread choice, submerge each slice of bread in egg batter and allow the excess to drip off. Place on heated surface and cook until each side each lightly browned. Remove from heat.
Top cooked French toast with berry sauce and finish with whipped mascarpone.

Ingredients
For the berry sauce:
4 cups frozen berries
1/4 cup grand marnier
3/4 cup Swerve, powdered
1/4 cup honey
2 T lemon juice, freshly squeezed
For the whipped mascarpone:
8 oz mascarpone cheese
1 cup heavy cream
1/2 tsp orange zest
1 T orange juice, fresh squeezed
For the egg batter:
4 large eggs
1 T grand marnier
1/4 cup heavy cream
1/8 tsp nutmeg
1 tsp vanilla
1 T Swerve brown
Instructions
For the berry sauce:
Combine all ingredients together in a saucepan over medium heat. Bring to a boil, cook 5 minutes or until desired thickness.
Strain through a fine mesh sieve.
For the whipped mascarpone:
Whip the cream until medium peaks form.
Fold in mascarpone, orange juice, and orange zest.
For the egg batter:
Combine all ingredients together and mix well.
All together:
Heat a flat griddle or large skillet over medium heat. Place one tablespoon of butter in/on heating surface for each slice of bread that will be layed down.
