Coconut Rice is Light and Fluffy

This light and fluffy coconut rice is the perfect blend of coconut milk, garlic, and fresh lime. It creates a nicely balanced rice that can accompany your meal or become a base for your favorite ingredients.

All too often coconut rice turns out gummy or too coconutty. This light and fluffy coconut rice is just right with a hint of garlic and a pinch of lime.  

Every time I make this rice, I completely over-indulge, like totally pig out. It is so light and fluffy and it doesn’t have an overpowering flavor that masks other ingredients or accompaniments.

This is a super delicious and easy recipe that will be incorporated into more future dishes on the site.

Jasmine Rice

This recipe uses jasmine rice which is a fragrant, slightly sticky, long grain rice. Jasmine rice originates in Asia. In Thailand, it is rated for its floral scent, called “Hom Mali”. The best grains of rice, containing “Hom Mali”, are stamped with a green seal. It has a fast-cooking time and is suitable for gluten free and vegan diets.

How to make Coconut Rice

Start by rinsing the jasmine rice in a fine mesh sieve under running water until the water runs clear.

Mince the garlic and zest the lime, then lightly sauté in oil in a large sauce pot.

Bring the water and coconut milk to a boil with the salt and lime juice. Add the rinsed jasmine rice to the pot, cover and reduce heat to low.

Allow the rice to cook for 15 minutes then turn off heat. Leave covered for an additional 5 minutes and then uncover the rice and let sit for 5 minutes before serving.

Ingredients

2 cups jasmine rice

1 can or 13.66 fl. oz. lite coconut milk, I use Thai Kitchen

1/2 cup water

3 garlic cloves, minced

1 tsp lime zest

2 Tablespoons lime juice

1 Tablespoon olive oil

1/2 tsp kosher salt

1 Tablespoon erythritol


Instructions
