Vegetable Nutrition and Season Guide

Are you looking for vegetable nutrition information and a season guide for the Pacific Northwest? Wondering what vegetables have the lowest carb counts or what veggies are in season right now? Look no FURTHER, we’ve got you covered!

Vegetable Nutrition

Vegetable nutrition is key in providing us with many of the essential vitamins and minerals our bodies require. Most of us are thinking about our waist-lines when consuming vegetables and not the many diseases they fight off from our bodies.

Since we are a low carb related site here at Hunger for Spice and not a nutrition site, we wanted to provide you and your family with the nutrition values of the most common used vegetables in the kitchen. (Minus the super starchy ones, such as potatoes).

Provided is a downloadable PDF with most of the great veggies we all use. This contains the calorie counts, fat grams, protein values and net carbs. Keep this useful download on hand to aid in your healthy choices.

In case you were wondering, net carbs are calculated by taking the total number of carbs and subtracting the number of grams of fiber.

The numbers in the chart below are based on fresh and chopped vegetables.

*Percent Daily Values are based on a 2,000-calorie diet. Your daily values may be higher or lower depending on your calorie needs.

Vegetable Season Guide

Vegetables cost less when they are in season. Buying from farmers or farmers markets are great ways to buy local as well as get the best quality produce possible.

To help you and your family stay on top of “what’s in season” during the season changes we have provided a downloadable PDF to help you keep track.

*Note: The information provided is based on the Pacific Northwest of the United States of America, specifically Oregon. If you live in a different region of the world, please reference more relevant information.
