Who doesn’t love the Freshest of Peaches?
Who can pass up perfectly ripened peaches in the prime of their season? Not me! I always aspire to keep recipes as seasonal and as fresh as possible. Using fresh, quality ingredients is truly what makes any dish shine.
As I am sure you have read in many of my other posts, I visit Hood River, Oregon at least a couple times a year. The scenery itself is breathtaking coming in from the Southeast end on State route 35 N. There are rolling hills with acres and acres of fruited trees, wine vineyards and vintage farmsteads scattered about.
They have a 35 mile “fruit loop” that guides you through the country side to farm stands featuring your favorite of fruits, including pears, peaches, nectarines, cherries and apples. Along the way you will also find wineries, breweries, preserves of all sorts, bakery items and a lovely lavender farm.
I have all my favorite spots picked out and visit them each time I pass through. Each and every time, I have to desperately try to restrain myself from purchasing more than I can manage the time to handle. I fail miserably sometimes because my imagination runs wild and I think I am a super-chef that can make ten meals a day, even if I am single. Thankfully, I have many friends that like to eat free food!
Thankfully, this time I stuck to my guns and only purchased enough peaches to make two cobblers and a couple of pears for a salad.
Suggestions for making with Canned or Frozen Peaches
I have not used canned or frozen peaches for this recipe. If you want to try the recipe with either here are some suggestions:
- Thaw the frozen peaches first
- Drain both frozen and canned well
- Add 2-4 Tablespoons extra sweetener to the peaches

Preparing the Peaches
The most tedious part of making peach cobbler is peeling the peaches. If the peaches are very ripe, the skin will likely peel off easily but if they are anything less than very ripe, blanching is the best way to peel them without losing any of the flesh.
To blanch the peaches, bring a large pot of water to a boil and place the peaches in the water for 30-40 seconds. Remove the fruit with a slotted spoon and place in an ice-bath (a large bowl with ice and water). Allow the fruit to sit in the water for 3-5 minutes to cool before peeling.
Cut the peaches in half and remove the pit, then cut each half into half again and cut across the top about ¼” thick.
How to make Spiced Peach Cobbler
Preset the oven to 350° F. Begin getting your mis en place (everything weighed or measured out). When all of the ingredients are ready to go, cut the butter into smaller pieces and place in the bottom of your pan. Place the pan in the oven for ten minutes.
In the meanwhile, mix the peaches with the cornstarch, granulated Swerve and ginger in a large bowl and set aside.
In a separate bowl, combine the almond flour, whey powder, cornstarch, Swerve confectioners, baking soda, salt and garam masala. Mix the dry ingredients together and then add the egg and heavy cream and mix until well combined. (The batter will be thick.)
Remove the pan of butter from the oven and carefully transfer the batter on to the top of the butter. Spread the batter out evenly over the butter. Add the peach mixture to the top of the batter. Place in the oven and bake for one hour.
