Description

Spiced peach cobbler is baked with garam masala and ginger spiced peaches for a tasty twist on one of your old-time favorites.


Ingredients

Scale

In the pan:

4 Tablespoons or 56 grams Butter

For the Peaches:

3 cups or 535 grams peaches (about 4)

1/2 cup or 98 grams Swerve granulated

2 Tablespoons or 18 grams cornstarch

1 tsp ground ginger

For the Batter:

1 1/2 cup or 155 grams almond flour

1/3 cup or 30 grams vanilla whey protein powder (I use Precision Engineered)

2 tsp or 7 grams baking powder

1 Tablespoon or 9 grams cornstarch

1/4 tsp kosher salt

1 tsp garam masala

1/3 cup or 42 grams Swerve confectioners

1 egg or 45 grams

2 Tablespoons or 36 grams heavy cream


Instructions

Peel and cut the peaches in half and remove the pit, then cut each half into half again and cut across the top about ¼” thick.

Get all other ingredients weighed or measured out. (preferable to weigh)

Preheat the oven to 350° F, then scatter the butter in the bottom of the 1.5 qt pan and place in the oven for ten minutes.

Mix the peaches with the cornstarch, granulated Swerve and ginger in a large bowl and set aside.

In a separate bowl, combine the almond flour, whey powder, cornstarch, Swerve confectioners, baking soda, salt and garam masala.

Mix the dry ingredients together and then add the egg and heavy cream and mix until well combined.

Remove the pan of butter from the oven and carefully transfer the batter on to the top of the butter. Spread the batter out evenly over the butter.

Add the peach mixture to the top of the batter. Place in the oven and bake for one hour.

Garnish:

Serve with whipped cream or ice cream of choice.
