These gluten free, fruit and nut breakfast cookies will suppress your morning appetite leaving you satisfied and feeling guilt free. They are packed with nuts, mixed fruit, gluten free oats, and lightly sweetened with honey.
The first time I made these delightful cookies, I ate 5! They were just so darn good I couldn’t stop. But, fair warning they will sit like a log in your belly…if you eat 5!
Fit to your diet
If you are on a vegan, dairy, or paleo diet, substitute your favorite oil in place of the butter. I have made this recipe without the eggs, and they are still wonderful. You just have to make sure to allow the cookies to cool completely before handling.
The cookies are effortless to make. They will last refrigerated and in a sealed container for up to 14 days. Cook up a double batch today and enjoy one or two with your early morning coffee or have a couple for a healthful snack during the day.
How to make gluten free fruit and nut breakfast cookies
Turn the oven on 350 degrees and line a half sheet pan with parchment paper or a silicone mat. Next, melt the butter in a medium-sized bowl and add the applesauce, honey, vanilla, and eggs to the butter and mix well.
Combine all dry ingredients and mix together. Then, add the butter mixture to dry mixture and mix well. Scoop the dough in to uniform size discs on to the prepared sheet pan and lightly press down. Bake about 16 minutes. Allow to cool.
This time around I used whole roasted hazelnuts, chopped pecans, raisins, and whole craisins. I always use whatever I have on hand, so mix it up and have fun!

Description

Ingredients
4 T butter
1/2 cup unsweetened applesauce
1/4 cup honey
1/2 tsp real vanilla extract
2 eggs
1 1/2 cup gluten free oats
1 cup mixed fruit
1 cup mixed nuts
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup almond flour
Instructions
Turn oven on 350 degrees F.
Line a half sheet pan with parchment paper or a silicone mat.
Melt the butter in a medium-sized bowl.
Add applesauce, honey, vanilla, and eggs to the butter and mix well.
Combine all dry ingredients and mix well.
Add liquid mixture to dry mixture and mix well.
Scoop dough in uniform size discs on to sheet pan.
Bake about 16 minutes.
Allow to cool.
Notes
The cookies will hold their shape well if you form a solid disc shape.
Allow to cool completely before handling if omitting eggs.
