My mom made biscuits since I can remember. I recall the kitchen always looked like she had slaved away for hours with flour covering the entire kitchen counter and dough globbed on fingers.
Biscuits and gravy were one of her specialty breakfasts and my sister and I have come to master her recipe over the years. Even though we don’t eat the traditional carb-filled biscuits and gravy anymore, we are OFTEN requested to make the special recipe for other family members.
What you will need:
- 1 ½ cups almond flour, plus more for dusting
- 2 TBL buttermilk powder
- 1 ½ tsp baking soda
- ½ tsp kosher salt
- 1 tsp xanthan gum
- 6 TBL butter
- 2 TBL heavy cream
- Biscuit cutter
- Rolling pin
- Baking pan
- Food processor or pastry cutter
- Parchment paper or silicone mat
Helpful Tips
This biscuit recipe is just a little bit crumbly and can be testing to make breakfast sandwiches out of, especially when very fresh. The biscuits flatten out more than desired but they are VERY tasty and make a wonderful substitution for the real deal. Refrigerate the dough at least 30 minutes before baking to allow the biscuits to hold their shape better.
Don’t try to make the biscuits thicker in hopes of yielding a “higher” biscuit, they will not cook properly.
Use a glass, preferably a thin rimmed one, for cutting the biscuits if you don’t have a biscuit cutter.

How to make Easy Keto Buttermilk Biscuits
In a food processor or in a large bowl, combine all of the dry ingredients together and pulse or mix together. Cut the cold butter into the dry ingredients until the butter is broke down into pea-size pieces.
Add the heavy cream to the dry ingredient mixture and incorporate until just combine.
Roll the dough about one-inch thick and cut as many biscuits out as you can with the cutter before re-shaping the dough.
Place in a preheated 400° oven and bake for 12 minutes.
