This isn’t your plain old tahini sauce, this sauce is punched up with fresh ginger, spices, coconut milk, and kissed with honey. Tahini sauce is a great way to liven up vegetables, stir fry’s, or make your favorite hummus with.
I love visiting the fruit and vegetable stands and stirring my brain about what to create. This baby Bok choy caught my eye and I wanted to create something new to drizzle over the top.
Brush the Bok choy with your favorite pepper or garlic oil. I used a combination of olive oil and Aleppo pepper.
Roast the baby Bok choy in a 375° oven for 10 minutes, then turn and continue cooking for an additional 5-7 minutes.
This tahini sauce turned out super yummy and I couldn’t wait to try it a few extra dishes.

Northwest Fires
Last week I stated I would be heading to the Oregon coast for a little trip. I was hopeful to grab some pics and share with you some of my favorite spots.
We could not make it in to the town where we had reservations. With the fire conditions as they are, we were lucky to make it anywhere.
Obviously with the amount of smoke in the air, we didn’t get out and do much but I was still thankful for the time away. Our first day and night we were without power and so grateful to have it back the following day.
We did try three new restaurants but nothing exciting to report back on those, unfortunately.
I stayed updated on the fires everyday and had hopes of returning to central Oregon with better air quality. The closer we got to home, the thicker the smoke grew.
The smoke is horrific here in Central Oregon (at least in my part) and I know worse in other areas. It is very difficult to sleep at night. I keep waking up coughing and the smell of smoke is completely overwhelming.
The Lionshead fire is the nearest fire to my location and I have a handful of friends that are at level 2 evacuation orders as a result of the fire.
I am praying for all of those still in danger of losing their homes, those fighting all the fires and those suffering from the loss of loved ones, their homes, and parts or all of their towns.

Tahini Sauce

Ingredients
2 T light coconut milk
1 T thick coconut milk
1/4 cup tahini
1/2 tsp grated ginger
1 tsp cumin
1/2 tsp garlic, ground to a paste
1 T lime juice
1/2 tsp kosher salt
1 tsp Szechuan peppercorns, freshly ground
1/4 tsp corriander
1 T olive oil
2 tsp honey
Instructions
Lightly saute the garlic and ginger in the olive oil.
Stir in the tahini sauce until softened.
Add all remaining ingredients and mix well.
Remove from heat.
