Simple Syrups
Simple syrups are so easy to make and the flavor possibilities are endless. Add your favorite edible fragrant flowers (be sure they are pesticide free), flavor with coffee, vanilla beans, cocoa or extracts.
The key is adding the ingredients at the right time. Extracts and liqueurs should be added during the cooling process, so they do not evaporate during cooking.
Other ingredients should be added before the heating process begins so it flavors the liquid during the cooking process.
In this recipe we will be substituting a portion of the water for lemon juice. If making other flavors, when in doubt, use straight water.
What you will need to make sugar free lemon simple syrup:
- Lemons
- Erythritol
- Xylitol
- Water
- Large sauce pot
- Fine mesh sieve
How to make Sugar Free Lemon Simple Syrup
Zest two lemons and place the lemon zest in the large sauce pot. Juice as many lemons as it takes (6-10), depending on size and amount of juice they produce, to make one cup of lemon juice and add to the sauce pot. Add the water and the sweeteners to the sauce pot.
We use Erythritol in this recipe because it is less expensive than using Swerve granulated. We also substitute part of our sweetener with Xylitol because it has a different chemical makeup than the other sweeteners we use and helps prevent crystallization. If you don’t have any on hand and are using the syrup right away, using all Erythritol will be fine.
Bring the contents of the sauce pot to a boil and then reduce to a simmer for 10 minutes, stirring often. Strain the syrup with a fine mesh sieve. If you don’t have a fine mesh sieve, omit adding the lemon zest as it will turn bitter if left in the mixture.
Use immediately or place in a jar with a lid and refrigerate for up to three months.

1/2 cup water
1 cup Xylitol
2 cups Erythritol
