Maple Pecan Ice Cream is exploding with maple flavor and filled with crunchy pecans. This no churn ice cream takes no time to whip up!
No churn ice cream is one of the best inventions ever! No heavy equipment needed and no more attending to your hand-crank ice cream maker, churning away until you are certain your arm is truly going to fall off.
This is an unbelievable delicious low carb and gluten free dessert to cool you off on the hot sunny days and it’s only five ingredients!
What you will need:
- 1 recipe for sweetened condensed milk (low carb), which is only 2 of the ingredients listed below!
- Heavy cream
- Swerve confectioner’s
- Mapleine
- Pecans
- Pinch of Salt
What is Mapleine
Mapleine is an imitation maple flavoring extract. It has a strong maple flavor and a deep dark brown color that reflects the color of used, ground espresso beans.
Mapleine has been around for as long as I can remember and used to be a run-of-the-mill commodity back in the day. It is much harder to find stocked on the shelves of your local stores these days. It is still widely available to order on-line if you can’t find it in your area. I believe Crescent is the only company that sells “mapleine” but you can buy maple extract from various companies.
How to make Maple Pecan Ice Cream
Once you have made the sweetened condensed milk, preferable the day before, this recipe comes together in less than ten minutes.
In a stand mixer with a whisk attachment, whip the heavy cream to medium peaks. Add the sweetener, mapleine and salt, then whip the cream to just under stiff peaks.
Be careful to not overwhip the cream!
Fold the sweetened condensed milk and pecans into the heavy cream mixture with a rubber spatula.
Have a loaf pan lined with parchment paper or have sterilized glass jars prepared.
WARNING, this is finger-licking good, proceed quickly and transfer the mixture into the container/s!! Cover and place in the freezer otherwise you will find yourself eating the entirety of the batch before it ever makes it to a frozen state!!
Don’t check on the ice-cream after a couple hours to see if it is frozen yet, it’s not and you will devour more!! I am teasing, I actually enjoy it most at this state.
The mixture will freeze in about four hours. If freezing overnight, pull out of the freezer fifteen minutes before serving. This no-churn ice cream will not keep long in the freezer, up to a couple of days, so go ahead and consume it all🍨

1/2 cup or 4.5 ounces sweetened condensed milk -low carb
1 1/2 tsp mapleine
1/3 cup Swerve confectioner’s
2/3 cup or 65 grams chopped pecans
