While I may be adventuresome in the kitchen, my sister is the one who is always buying new products off of the market shelves to try. This is always beneficial for me because when we find something we like, I make it my mission to make it even better.
She came across Highkey snickerdoodle cookies and found herself obsessed. I thought they were decent and of course it was “game on” for me.
We think these cookies turned out down-right delicious!!
What you will need:
- Butter
- Coconut oil, unrefined
- Swerve, confectioners
- Eggs
- Almond flour
- Arrowroot flour
- Xanthan gum (optional)
- Baking soda
- Cream of tartar
- Real vanilla extract
- Kosher salt
- Swerve granulated
- Cinnamon
- Baking sheet
- Parchment paper or silicone mat
- Mixing bowl
- Rubber Spatula

These enticing cookies are low carb, gluten free and keto friendly. Each cookie will approximately contain 139 calories, 13.4 grams of fat, 2.1 net carbs and 3.6 grams of protein. All numbers are approximate and based on products that we use.
How to Make Low Carb Snickerdoodle Cookies
Set the oven to 350°. Have the butter and eggs at room temperature.
Weigh or measure all of the ingredients and set aside. Sift the dry ingredients together, omitting the sweeteners and cinnamon.
Combine the cinnamon with the granulated Swerve and set aside.
In a stand mixer with a paddle attachment or in large bowl, cream the butter and coconut oil together until light and fluffy, then add the confectioners sweetener. To the mixture, add the egg and mix until the batter is light and airy.
Add the dry ingredients one-third at a time, scraping down the bowl periodically, then add the vanilla.
These cookies have a tendency to spread. To prevent excessive spreading, refrigerate the dough for 30 minutes before baking.
Form the dough into 1” round balls and roll in the cinnamon mixture. Flatten the dough to about 3/8”, using your hands or with plastic wrap and a glass.
Bake in the oven for 12-14 minutes.
