This fresh picked low carb blackberry crumbler is in a category of its own, so I named it as such! It’s not a cobbler and it’s not a crumble, it’s a CRUMBLER! Fresh picked blackberries baked with a layer of sweet, nutty pastry.
It’s okay to use store bought fresh blackberries if you can’t run out and pick your own. Frozen blackberries contain more moisture so you will need to adjust the recipe, just check the notes.
Cobbler vs. Crumble vs. Crumbler
A cobbler is a dish, sweet or savory, that is generally baked with a thick batter, such as biscuits. A crumble is a dish of the same sorts but generally has a thin crust made up of flour, sugar and butter.
A “crumbler” lies somewhere right in-between and contains no gluten to weigh down the dish or you. The nutty pastry allows the berries to shine while still adding a complimentary crust.
Blackberries grow all over Oregon and are usually ripe and ready to pick anywhere from July to September. I pick mine near the Oregon coastal range. A friend of mine showed me a “special” place a few years back. It is quiet and private and we go each year to gather my yearly supply.

Caring For Your Blackberries
Blackberries do not keep for more than one or two days, so I usually return home and immediately bake a fresh pie and freeze the rest to have on hand.
To freeze blackberries or other various types of fruit, lay the fruit out in a thin layer on a sheet pan lined with parchment paper and place in the freezer. Once the fruit is frozen, remove and place in a vacuumed sealed bag or in double layered Ziploc bags, removing as much air as you can.

Description
Fresh picked blackberries baked with a layer of nutty pastry.
Ingredients
For the filling:
5 cups fresh blackberries
2 tablespoons fresh lemon juice
1/4 teaspoon xanthan gum
1/4 cup monkfruit sweetener, Lankanto
For the pastry:
1 cup almond flour
3 tablespoons vanilla whey protein powder, I use Precision Engineered
1/4 cup Swerve brown
1/2 teaspoon baking powder
4 tablespoons butter, at room temperature
1/4 cup + 2 tablespoons heavy cream
1/2 cup chopped pecans
1/2 cup sliced almonds
Instructions
Turn oven to 375 degrees.
For the filling:
Combined all filling ingredients together and very lightly toss together.
Transfer to an 8×12 casserole dish.
For the pastry:
Combined dry ingredients, except for the nuts, mix.
Add the butter and cream together, then add the cream and mix well,
Add the nuts and mix.
Take large scoops in to the palms of hands and pat out to approximately 3/4 inch thick pieces and lay over the top of the berries.
Repeat until the berries are mostly covered, leaving some space in between for air to escape.
Bake for 20 minutes or until crust is golden brown.
Notes
If using frozen berries, double to amount of xanthan gum.
