How long will Nut Free Keto Sugar Cookies Keep
Wrap your cookies in foil and seal in an air tight container. Refrigeration is always a good idea. They will stay fresh five to seven days.
Nutrition
Sugar cookies are gluten free and low carb. Each cookie approximately contains 92 calories, 7.4 grams of fat, 4.1 net carbs and 2 grams of protein. These numbers do not include the addition of frosting or any other garnishes.
How to make Nut Free Keto Sugar Cookies
In a stand mixer fitted with a paddle or in a large bowl with a mixer, cream the room temperature butter and cream cheese together.
Weigh or measure all the dry ingredients together and add to the butter mixture one-half at a time. Add the vanilla and the egg.
Lightly flour a work surface with coconut flour and turn the dough out on to the surface. Lightly dust the top of the dough with coconut flour and roll out about 3/8” thick with a rolling pin.
Use your favorite cookie cutters and place on a cookie sheet lined with parchment paper. Bake in a 350-degree oven for 9 to 11 minutes.
For the Frosting
While the cookies are baking, in your stand mixer with a paddle attachment or in a bowl with a mixer, cream the room temperature butter and cream cheese together. Next, add in the sweetener and then the vanilla.
Designing Low Carb Sugar Cookies
There are so many ways to frost and design sugar cookies. I am all about simplicity and getting them in my mouth.
- If they are for a special occasion, color the frosting and place your favorite sprinkles on top.
- You can divide the frosting and change to multiple colors and pipe your favorite designs.
- Frost and use patterns to sprinkle sweetener over the top.
