Keto Morningstar muffins are absolutely the BEST low carb and gluten free muffins yet! These healthy muffins are made with freshly grated carrots and unsweetened applesauce, making them not only amazingly delicious but healthy as well.

What makes Morningstar Muffins so Great?
We adore having a grab and go breakfast around here and have been making a few new low carb recipes, not so heavy in the FAT (grams) and calorie department. The flavor and texture of these healthful muffins are heavenly! Who says we can’t have it all?
This recipe is made from the heart with my mom and sister in mind. First of all, my mom is CRAZY about carrot cake and so I wanted to create a muffin that would resemble that. Secondly, together they have lost a combine total of 132 pounds since last year and helping them stay on track while still being able to taste test my recipes is vital to all of us.
Can You Use Matchstick Carrots?
I get it, I am totally lazy sometimes too! Yes, you can use pre-cut matchstick carrots. The end result will not be the same as using freshly grated. Freshly grated have more moisture and will basically disappear into the muffin, whereas the matchstick carrots will remain course. Add two extra tablespoons of applesauce to make up the difference.
Baking Keto Morningstar Muffins in Liners
The tulip liners require almost twice the amount of batter than a standard cupcake liner. I much prefer the end product when using the tulip liners, which will yield seven muffins. Utilizing standard cupcake liners will yield thirteen muffins.
What you will need: (make these vegetarian with substitutions listed)
- Almond flour
- Whey protein powder, we like Jarrow
- Golden flaxseed, we use Bob’s Redmill
- Arrowroot flour
- Swerve Brown
- Baking powder
- Eggs
- Heavy cream or coconut oil
- Carrots
- Pecans
- Coconut, unsweetened shredded
- Butter or vegan butter
- Applesauce, unsweetened
- Real vanilla extract
- Cinnamon
- Nutmeg
- Grater
- Cupcake/muffin liners
- Cupcake/muffin pan
Nutrition Facts for Keto Morningstar Muffins
If using standard cupcake liners, each muffin will approximately contain 178 calories, 14.6 grams of fat, 4.9 grams of net carbs, and 6.3 grams of protein. If using tulip liners, each muffin will approximately contain 330 calories, 27 grams of fat, 9 grams of net carbs, and 11.7 grams of protein.
How to make Keto Morningstar Muffins
Set the oven to 350°.
Peel and grate the carrots and set aside. Chop the pecans and set aside.
Weigh or measure all of the dry ingredients, then sift together in a medium size bowl and set aside.
In a stand mixer with a paddle attachment or in a large bowl with a hand mixer, cream the room temperature butter and sugar together until light and fluffy. Scrape down the bowl.
Add one egg at a time to the butter mixture, then add the applesauce. Scrape the bowl down.
Incorporate the dry ingredients one-third at a time. After scraping the bowl down, add the heavy cream and vanilla to the mixture.
Add the coconut, carrots, and two-thirds of the nuts to the batter.
Scoop the batter into the liners and top with the remaining nuts. Bake tulip muffin liners for 40 minutes and standard muffin liners for 25 minutes.

1/2 cup or 40 grams Whey protein powder
