Inspiration for Keto Lavender Scones
My sister-in-law, Maria, is obsessed with lavender scones. I have made her “normal” lavender scones in the past but she recently started a low carb diet and desperately wanted me to put a recipe together for her. Maria actually likes our low carb and gluten free versions of scones better than the standard scone recipe. She said they are not as dry and crumbly. Agreed!!
Cascade Lavender Farm
Every year I travel outside of Hood River, OR and visit the lavender farm. I was very impatiently waiting for the lavender to bloom this year and started searching exactly when it was going to be in full bloom, when I found that there was actually a farm not too far from where I lived.
On my first visit to Cascade Lavender Farm, the lavender was not in bloom quite yet, told you I was impatient! When I finally made it, I scored an array of lavender bunches, soaps and buds and was so excited to get home to start baking with the fragrant lavender.
Flower types
Some lavender flowers are meant for oils, soaps, and crafts and are not meant to be used for culinary use. Ask the people at the farm for help if you don’t know which flowers are best for culinary use.
The only other place I have found lavender (not online) is at World Market in their spice selection.
Nutrition
These scones are gluten free and low carb. We always like cutting or making our products a little smaller around here. If cutting into eight sections, each scone will approximately contain 214 calories, 18.8 grams of fat, 3 net carbs and 7.5 grams of protein. If cutting into six sections, each scone will approximately contain 285 calories, 25 grams of fat, 4 grams of net carbs and 10 grams of protein. These numbers do not reflect additional flour used for dusting.

How to make Keto Lavender Scones
Preheat the oven to 350° and line a pan with parchment paper. Have the butter and the egg at room temperature.
Weigh all of the dry ingredients separately, then combine together in a large bowl and mix. Add the butter and disperse it throughout the dry ingredients using a fork or a pastry cutter.
Crack the egg in a separate bowl and whip it, then add to the dry ingredient mixture and combine well.
Add the lavender, lemon zest and lemon juice to the dry ingredient mixture and combine. Add the heavy cream and mix into the batter.
Dust a clean and dry surface with almond flour. Transfer the dough to the surface and start shaping into a disc. Flip over and continue forming about one inch high. With a bench scraper, cut in half, then cut diagonal and diagonal again to form six scones. Place on prepared baking sheet and bake in the oven for 14-16 minutes.

150 grams or 1 1/2 cups almond flour
16 grams or 2 Tablespoons coconut flour
10 grams or 2 Tablespoons vanilla whey protein powder
2 tsp baking powder
30 grams or 1/4 cup Swerve confectioners
75 grams or 5 Tablespoons butter
1 1/2 tsp lavender
zest of one lemon
2 tsp lemon juice, fresh
