My sister brought back a loaf of keto bread from one of her shopping excursions and I was super pumped to try it. However, it contained vital wheat gluten and the taste was uninviting to say the least. I was determined to make this bread taste great for her somehow and I certainly did.
Versatile Berry Bread Pudding Recipe
You can easily substitute a gluten free bread if you are gluten intolerant or have celiac. Substitute regular white bread if you have no dietary restrictions. Use whatever berries you may have on hand or are in season. Frozen berries work well too. Substitute Grand Marnier if you are not on a strict keto diet.
What is Grand Marnier?
Grand Marnier is a top shelf orange liqueur. If you do not wish to invest in Grand Marnier, Cointreau is the next step down and is not quite as expensive. Always check behind the counter at the liquor store for smaller bottles.
How to make Keto Berry Bread Pudding
Take eight slices of keto, gluten free or regular white bread and cut them in to 3/4” squares. Place in a 6 x 10 baking dish. Whisk the eggs, egg yolks, heavy cream, sweetener, orange juice, zest and vanilla together. Pour the egg mixture over the top of the bread and mix together.
Next, distribute the berries in the bread mixture and allow it to set for 15 minutes. Bake the bread pudding in a 350-degree oven for 30-35 minutes or until the top begins to brown.

Ingredients
- 8 slices keto or gluten free white bread
- 4 whole eggs
- 4 egg yolks
- 1 1/2 cups heavy cream
- 6 T. granulated Swerve
- 3 T. fresh squeezed orange juice
- 1 tsp fresh orange zest
- 1 T. + 1 tsp vanilla
- 1/2 cup assorted berries
Garnish:
fresh whipped cream, sugar free ice cream
Instructions
