Candied nuts are lightly spiced with cinnamon and kissed with a touch of honey. They make great gifts, perfect garnishment for cakes, fantastic additions to liven up your salads and much more!
The first batch I made was for a specific cake I was making. The cake didn’t quite turn out how I intended it to so I wasn’t going to use the nuts until I got the cake recipe right. Slowly the candied nuts started disappearing…right into my belly.
I love these nuts! They are so light and not overly sweetened or spiced. They are one of my absolute favorite snacks to eat and to make. The aroma of honey and cinnamon spiced nuts filling the kitchen is almost as pleasant as eating them.
This recipe works for all kinds of nuts, whole, sliced, slivered as well as all varieties.
You can always change the spices up, especially if adding to a specific regional dish. In this basic recipe, I often add a pinch of cayenne.
How to Make Candied Nuts
Candied nuts are super simple to make, most of the time spent is in the baking. I love when the oven does all the work!
Have the oven set at 300° and line a half sheet pan with parchment paper.
Whisk the room temperature egg white until it is just short of being at a stiff peak. Add the cinnamon, salt, sweetener and honey into the egg white and mix until just combined. (Do not over-whip.) The egg whites will deflate and this is normal.
Fold the nuts into the egg white mixture and spread out evenly of the pan.
Bake for 45 minutes, stirring every 15 minutes.
Set the pan out on a wire rack to cool. If you can keep your hands off of the nuts, they will dry and harden as they cool to room temperature.

1/4 cup Swerve confectioners
1 Tablespoon honey
3 cups unsalted nuts
