Description
This magical zucchini hummus is vegan, gluten free, and low carb all in one!
Ingredients

1 pound zucchini, 2 medium
1 Tablespoon tahini
2 Tablespoons olive oil
1 Tablespoon lemon juice, fresh squeezed
1/2 tsp kosher salt
Instructions
Cut the ends off of one pound of zucchini, about 2 medium sized. Cut in half lengthwise and then in half again, creating four long spears out of each zucchini.
Place the zucchini in a large casserole dish and lightly coat with olive oil and kosher salt.
Transfer to a half-sheet pan and place in a preheated 425° oven. Bake for 35 minutes or until very tender.
Remove from the oven and place in a blender with the olive oil, tahini, lemon juice and salt. Puree until smooth.
