Description

Blueberry bagels are one of the quickest and easiest breakfast sides to prepare. The bagels utilize a “fathead” dough recipe which make for an easy process.


Ingredients

Scale

1 3/4 cup or 190 g part-skim, shredded mozzarella cheese

1 cup or 90 g blanched almond flour

1 teaspoon vanilla whey protein powder

1 egg, beaten

2832 blueberries


Instructions

  • Set oven at 350 degrees.
  • Place cheese, almond flour and whey protein in a microwave safe bowl and mix together. 
  • Microwave 45 seconds. Remove and stir well.
  • Microwave additional 30-45 seconds stir well.
  • Let cool then knead egg into dough.
  • Divide the dough in half and then again, such that you have four equal portions.
  • Roll into 1 1/2 inch ropes then lay flat and make indent in center of dough to form “canoe-like” shape. 
  • Add seven to eight blueberries.
  • Gently form dough around blueberries.
  • Form and pinch the two ends together.
  • Bake 15 to 18 minutes.
