Description

Keto Italian meatballs are tender and juicy, with a blend of ground beef and pork, parmesan cheese and Italian seasonings.


Ingredients

Units Scale

1.5 pounds ground beef 90/10

1 pound pork sausage, I use Jummy Dean all natural

1/8 cup Italian seasonings, slightly dried

1/4 cup grated parmesan

1/8 cup flaxseed meal

1/4 cup heavy cream

1/2 tsp. salt

1/2 tsp. black pepper, freshly ground


Instructions

In a small bowl, combine the flaxseed meal with the heavy cream and allow to sit for 10 minutes. 

In a large bowl, combine ground beef, ground sausage, parmesan cheese, Italian seasonings and salt and pepper, mix thoroughly.

Incorporate the flaxseed mixture in to the meat mixture and combine well.

Set oven to 350 degrees and have a sheet pan lined with parchment paper ready.

Form the meat mixture in to one-inch round spheres and place on the parchment paper.

Bake in the oven for 20 minutes.


Notes

If using dried Italian herbs, reduce to 1 tablespoon plus 1 tsp.
