Description
Keto scones with smoky bacon, sharp cheddar cheese and fresh chives.
Ingredients
150 grams or 1 1/2 cup fine ground almond flour (plus more for dusting)
26 grams or 3 tablespoons of flax seed meal
1/8 teaspoon kosher salt
1 teaspoon monkfruit sweetener
2 tsp baking powder
1/3 cup real bacon bits (I use Hormel)
2/3 cup sharp cheddar cheese
2 TBL chives, minced or 1/4 cup green onions, sliced thin
80 grams butter or 5 1/2 tablespoons, room temperature
3 Tablespoons or 45 grams heavy cream
1 large egg or 45 grams
Instructions
Set oven to 350 degrees.
Line a half-sheet pan with parchment paper.
Have butter at room temperature.
Combine all dry ingredients together in a bowl and mix well.
Add the room temperature butter and mix well.
Add the egg to the dry ingredient mixture.
Add the heavy cream.
Add the bacon, cheese, and chives. Mix together.
Dust a clean work surface with almond flour and form the dough into a disc shape about 1″-1 ¼” thick. Cut the dough into 6 or 8 pieces.
Place each section on the prepared pan, separated from one another.
Bake for 14-16 minutes.
