Description

Baked feta with tomatoes and olives is enriched with olive oil and herbs


Ingredients

Scale

8 ounce block of Feta cheese

1 1/2 cup cherry tomatoes, assorted colors

1/2 cup green olives

1/2 cup kalamata olives

1/2 tsp oregano

1/2 tsp thyme, fresh

pinch of salt, kosher

1/4 tsp black pepper, freshly ground

6 garlic cloves, sliced thin

3 TBL olive oil, preferably cold pressed and organic

fresh basil for garnish


Instructions

Place the block of feta cheese in the center of a medium sized casserole or oven safe dish.

Cut the tomatoes in half and place in a large bowl.

Measure the olives and add to the tomatoes.

Cut the garlic cloves into thin slices and add to the tomato mixture.

In a small bowl combine the seasonings and herbs with the olive oil. Mix the ingredients together then toss with the tomatoes, olives and garlic.

Pour the mixture over the top of the feta cheese and place in a preheated 425° oven for 20 minutes.

Garnish with fresh chiffonade basil.
