Description
Spiced carrots with a blend of fresh ginger, warm garam masala and fresh orange.
Ingredients
24 ounces carrots
2 tablespoons ginger, grated
2 teaspoons garam masala
2 teaspoons orange zest
1/4 cup fresh squeezed orange juice
1 teaspoon kosher salt
1/4 cup Swerve Brown
Instructions
Preheat oven to 425°.
Line a half sheet pan with parchment paper.
Peel and cut carrots, if using bulk.
Drain and dry carrots, if using baby.
Grate or mince the ginger.
Zest the orange, then juice it.
Combine the ginger, zest, juice, garam masala, salt and sweetener in a large bowl and whisk.
Add the carrots to the bowl and coat with the mixture.
Transfer to prepared baking pan and bake for 20-30 minutes, depending on desired doneness.
Baste carrots half way through cook time with remaining honey mixture left in bowl, if desired.
