Description

Maple Pecan Ice Cream is exploding with maple flavor and filled with crunchy pecans. 


Ingredients

Scale

1 1/2 cups heavy cream

1/2 cup or 4.5 ounces sweetened condensed milk -low carb

1 1/2 tsp mapleine

1/3 cup Swerve confectioner’s

2/3 cup or 65 grams chopped pecans


Instructions

Make the sweetened condensed milk recipe, preferably the day before.

Have a loaf pan lined with parchment paper or have sterilized glass jars prepared.

In a stand mixer with a whisk attachment, whip the heavy cream to medium peaks. Add the sweetener, mapleine and salt, then whip the cream to just under stiff peaks.

Fold the sweetened condensed milk and pecans into the heavy cream mixture with a rubber spatula.

The mixture will freeze in about four hours. If freezing overnight, pull out of the freezer fifteen minutes before serving.
