Description
Keto sugar cookies are soft and pillowy, and finished with a cream cheese buttercream.
Ingredients
For the Cookies:
76 grams or 1/3 cup butter
36 grams or 1.5 ounces cream cheese
82 grams or 2/3 oz cr cup coconut flour, plus more for dusting
10 grams or 1/8 cup vanilla whey protein powder
10 grams or 1 T cornstarch
7 grams or 2 tsp baking powder
pinch of salt
48 grams or 1/3 cup Swerve confectioners
45 grams or 1 large egg
1 tsp vanilla
For the Frosting:
8 T butter
6 ounces cream cheese
1 tsp vanilla
3/4 cup Swerve confectioners
Instructions
For the Cookies:
In a stand mixer fitted with a paddle or in a large bowl with a mixer, cream the room temperature butter and cream cheese together.
Weigh or measure all the dry ingredients together and add to the butter mixture one-half at a time.
Add the vanilla and the egg.
Lightly flour a work surface with coconut flour and turn the dough out on to the surface.
Lightly dust the top of the dough with coconut flour and roll out about 3/8” thick with a rolling pin.
Use your favorite cookie cutters and place on a cookie sheet lined with parchment paper.
Bake in a 350-degree oven for 9 to 11 minutes.
For the Frosting:
In your stand mixer with a paddle attachment or in a bowl with a mixer, cream the room temperature butter and cream cheese together.
Next, add in the sweetener and then the vanilla.
All together:
Once the cookies have cooled, place frosting on in your favorite design.
