Description
Keto berry bread pudding, baked in an orange flavored custard and filled with fresh assorted berries.

- 8 slices keto or gluten free white bread
- 4 whole eggs
- 4 egg yolks
- 1 1/2 cups heavy cream
- 6 T. granulated Swerve
- 3 T. fresh squeezed orange juice
- 1 tsp fresh orange zest
- 1 T. + 1 tsp vanilla
- 1/2 cup assorted berries
Garnish:
fresh whipped cream, sugar free ice cream
Instructions
- Take eight slices of keto or gluten free white bread and cut them in to 3/4” squares.
- Place in a 6 x 10 baking dish.
- Whisk the eggs, egg yolks, heavy cream, sweetener, orange juice, zest and vanilla together.
- Pour the egg mixture over the top of the bread and mix together.
- Distribute the berries in the bread mixture and allow it to set for 15 minutes.
- Bake the bread pudding in a 350-degree oven for 30-35 minutes or until the top begins to brown.
Notes
Substitue 2 tablespoons Grand Marnier for the orange juice and zest.
Substitute gluten free bread if gluten intolerant or have celiac.
Substitute regular white bread if you have no dietary restrictions.
