Description

Easy keto buttermilk biscuits are finger-licking good and made with only five ingredients.


Ingredients

Scale

1 1/2 cups or 150 grams almond flour, plus more for dusting

2 TBL or 12 grams buttermilk powder

1 1/2 tsp baking soda

1/2 tsp kosher salt

1 tsp xanthan gum (optional)

6 TBL or 85 grams butter

2 TBL heavy cream


Instructions

In a food processor or in a large bowl, combine all of the dry ingredients together and pulse or mix together.

Cut the cold butter into the dry ingredients until the butter is broke down into pea-size pieces.

Add the heavy cream to the dry ingredient mixture and incorporate until just combine.

Roll the dough about one-inch thick and cut as many biscuits out as you can with the cutter before re-shaping the dough.

Place in a preheated 400° oven and bake for 12 minutes.
